Enjoy Easy Recipes in a Flash Using Your Microwave
Each dish takes about 1 minute and a maximum of 3-4 ingredients!
On June 21st, Treemont's Microwave Cooking Demo class featured three fun-filled recipes to make in the microwave. This month residents learned how to make Microwave Mac and Cheese in a Mug, Meatloaf in a Mug and English Muffin in a Mug. The residents LOVED the recipes! The English Muffin in a Mug was served with the Microwave Mac & Cheese and the Microwave Meatloaf. Everyone LOVED the food. We fed 15 people with these 3 recipes. Microwave Mac and Cheese in a MUG
½ cup Small Elbow macaroni
½ cup water
¼ teaspoon salt
¼ cup milk
½ cup shredded cheese (we used Sharp Cheddar)
Combine pasta, water and salt in microwave safe mug.
Microwave pasta for 2 minutes on High, then stir.
Watch to see if water is foaming over side of cup.
Continue microwaving in two minute intervals until pasta is cooked (should take no more than 4 -8 minutes)
If pasta absorbs all the water before it’s cooked, add 2 tablespoons of water and continue.
Stir Milk & Cheese into pasta (if you want to get creative, add your favorites – veggies or chopped ham)
Microwave in 30 second intervals to melt cheese – stirring between each interval until cheese is melted and forms a creamy sauce.
EAT IMMEDIATELY – BEST WHEN PIPING HOT !
NOTE: You may add cooked food during the last 30 seconds. Cooked shrimp, chopped ham, chopped chicken and make this dish a COMPLETE MEAL.
If you need to reheat add a splash of milk.
This is an amazing recipe. Much better than boxed Mac & Cheese — rich, creamy and delicious. I didn't know you could cook pasta in a microwave — and it comes out absolutely perfect. It does foam up, though, but the results are worth it.
Microwave Meatloaf in MUG
2 Tablespoons Milk
1 Tablespoon Ketchup
2 Tablespoons Quick Cooking Oats
1 Teaspoon Meatloaf seasoning (Or onion soup mix)
1/4 Pound Lean Ground Beef (we used 80% lean ground meat and slightly more than meat)
Additional Ketchup – Optional – (we added shredded carrots)
In a small bowl combine milk, ketchup, oats & seasoning. Crumble beef over mixture and mix well.
Pat into a microwave save mug.
Cover and microwave on high for 3 minutes, or until meat is not longer pink and the thermometer reads 160 degrees, drain.
Let stand for 3 minutes
Serve with extra ketchup, if desired
This was an easy recipe and was tender and delicious. EVERYONE loved it. Simple and surprisingly delicious !!! Made it's own sauce, can add additional Ketchup, but we found it didn't need it.
90 Second Microwave English Muffin
¼ Cup Almond Flour/meal
½ Tablespoon melted butter
1/8 teaspoon baking powder
Pinch of salt
Combine all ingredients in a mug sprayed with cooking spray. Place in microwave for 90 seconds. Depending on wattage of microwave may need another 30 seconds.
Remove mug from microwave and invert on a plate. Muffin should fall from mug easily.
Allow it to cool for just a minute.
NOTE: With the recipe for English muffin - the Almond flour is "wheat free" and gluten free - - makes a light, fluffy and delicious muffin (kinda spongy).
Our residents said this muffin was crying for peanut butter or Nutela. It’s amazing and delicious.

Notes: cooking time will vary depending on microwave & width & depth of mug. I use small 6 oz mugs. Always keep close eye on mug so it doesn’t overflow or overcook.
